I’ve found that breakfast is one of the most difficult meals when helping patients with preventative nutrition. That’s why you need plenty of paleo breakfast recipes up your sleave! This one is a low carb, gluten free recipe and is simply delicious.

I want to cut right to chase and tell you – these gluten free pancakes are a gold mine! This is one of those Paleo breakfast recipes that is so very simple and the finished product is intensely delicious. In fact, these are probably the easiest pancakes we’ve ever made, on the plate and ready to eat in no time. And the taste is just – spiced autumnal heaven, with notes of cinnamon and nutmeg mingling with coconut and sweet potato.

Of my paleo breakfast recipes, this one contains liquid Stevia extract, a sweet-tasting South American herb with no actual sugar content. However, depending on your sugar stage, it’s there only if you really need to replace that sweet sensation. A slice of butter melted over the top (a Dental Diet food), and a handful of berries on the side – there’s going to be some smiling faces throughout your household!

If you’re feeling spunky, go ahead and make a few batches of these pancakes to store in the fridge and have ready to heat up throughout the week or when some quick energy is needed. This makes it a wonderful Paleo snack recipes idea!

The most time intensive part of this whole process is softening the sweet potatoes so that you can mash them. We chopped ours, steamed them in a little water, drained the water, transferred to a bowl and mashed before adding all other pancake ingredients. Be sure to heat your cooking oil well before spooning in the batter, and keep an eye peeled to prevent burning (no more than 5 minutes on each side).

Sweet potatoes are rich in beta-carotene which is really effective at raising Vitamin A levels (particularly in children). If you’re concerned about the glycemic index of sweet potatoes, try boiling them instead of using other cooking methods as boiling is thought to reduce the glycemic index. They’re also a good source of fiber and potassium! A yummy pancake and a ton of nutrition – not a bad combo for a quick Paleo meals recipe!

Ingredients

  • 1 c sweet potatoes, softened and mashed
  • 2 T coconut oil (for pan)
  • 2 eggs
  • 2 T coconut flour
  • ¼ t cinnamon
  • sprinkle of nutmeg
  • pinch of sea salt
  • ½ t vanilla
  • ½ t liquid Stevia extract (optional)

 

Procedure

1.  Soften sweet potatoes by steaming or boiling (you can also use the microwave if you prefer), then mash into a large mixing bowl.

2.  Heat coconut oil in a skillet over medium heat.

3.  Add all other ingredients to the bowl with the mashed sweet potato and whisk to combine thoroughly.

4.  Spoon into skillet (should make 3-4 pancakes), and cook for about 5 minutes.

5.  Flip and cook 5 more minutes.
